

NOODLES NOODLES NOODLES-MENRUIIt seems in todays world the popularity of sushi has taken over the American concept of what Japanese food is. Hundreds of new sushibars open up every month, but in most cities most people have never heard of Nabeyaki Udon, Ramen or Okinawa Soba. But let me tell you, in Japan noodle shops are everywhere and are a staple of the Japanese diet. Each shop and region has its own dinstictive taste and techniques.There are many different types of noodles in Japan but the basic main types are Soba, Udon, Ramen, Somen and Okinawa Soba.Soba Noodles are thin, made from buckweat and are served hot or cold. Very healthy for you, they are easy to make at home with a little scallions and thinly sliced roasted seaweed strips on top. The broth can be purchased pre-made (soba tsuyu) or you can make it with soy, mirin and a little sugar. Cold noodles are served on a Bamboo zaru. Usually there is thin strips of ( nori) roasted seaweed on top. The sauce is darker more flavorable than the noodles that come in hot broth and is served on the side in a small cup. Then you add your condiments usually scallions or maybe even a quail egg to the sauce then in one move dip your noodles in the sauce and slurp them up. The hot version is called by different names, but tempura soba is sold in a lighter warm broth with a couple pieces of crispy shrimp tempura on the top accompanied with the (negi)scallions in the broth. Another version has thin strips of different vegetables that are served as cruchy tempura on top. Extremly tasty! We carry a wide variety of Japanese Soba Noodles. Ramen Noodles are actually Chinese in origin but the Japanese adopted them and have made it distinctly their own. Ramen is a thin wheat based noodle. The broth is made from chicken and/or a pork stock with other ingredients added to make each place or region stand out. Although every place is different Ramen is usually topped with a thin slices of savory pork on top, scallions,and thin crunchy pink ginger caled beni shoga. There are many Ramen shops in Japan so finding your favorite is an adventure in itself. Somen Noodles are a very thin white noodles made from wheat. They are mostly served cold and have a very delicate taste to them. You dip the noodles in a a somen tsuyu sauce that compliments the fineness of the noodles. The sauce usually comes with thinly sliced scallions and fresh ground ginger that you can mix into the sauce as you eat. The cold noodles and rich tasting sauce make this an excellent dish for summer.We offer a variety of Somen Noodles Udon Noodles in contrast are thick and made from wheat. They are usually served hot in a mild broth, but are also sometimes served cold in the summer time. Although darker broth is made on the eastern side of Japan and a lighter broth on the west, it is the toppings that seperate the types. There are too mant types to list here, but one of my favorites is the Nabeyaki Udon usually made in a thick ceramic pot called a Donabe and served with scallions shrimp tempura, mushrooms, egg, and kamaboko fish cake on top.It is a great wholesome meal by itself. Okinawa Soba is actually very different from regular Soba it is not a buckwheat noodle at all but a thin flat noodle made from wheat. The broth is a pork based stock with Konbu and diakon added for a distinct flavor. The noodles are topped with scallions pickled ginger and stewed pork belly or bonless pork ribs called soki. Okinawa Soba is definetly my favorite having my family make it from scratch in Okinawa using freshly made noodles was probably the best tasting noodle dish I have ever had. Noodles come by so many different names and in so many different styles that I encourage you to research and most of all taste as many as you can. Finding your favorites will be the journey of a life time, but what a tasty trip it will be. And don't forget slurping your noodles is not only correct but fun as well. Happy noodle hunting!
